Spring festivals in Molise include the Scurpelle Festival in Fossalto, which celebrates this local speciality, a kind of savoury fritter made with flour, eggs, salt and yeast, and fried in very hot oil.
The Scattone Festival in Gildone in August focuses on a special kind of pasta dough, which is cooked in boiling water to which wine is added according to taste, along with a spoonful of sugar and a pinch of peppercorns or crushed chilli pepper. Apparently, this fierce pasta dish is very good for curing colds. Whether or not this is true, it is likely to clear your nose!
