The acronym DOP stands for Denominazione di Origine Protetta, which translates to “Protected Designation of Origin (PDO).” As the first country to embrace the slow food movement, which, among other things, defends regional cuisine and local foods, Italy is extremely protective of its artisanal products, and the DOP certification ensures the quality of various categories of food. It is a guarantee by the government to the consumer that the food being purchased is grown and made by local farmers and artisans using traditional methods and working in specific geographical areas.
