Made from strong cardboard with a white paper covering, these support the cake during icing and serving. To hide the rim and give the cake a cleaner look, trim the round with scissors about 1 inch smaller than the cake’s diameter—this also allows you to ice the cake more evenly at the base. If you wish, you can cut a round from any sturdy cardboard, or simply use the bottom of the springform pan.
