Delicious fillings between slices of fresh buttered bread are ideal for a picnic, a packed lunch or a supper snack. Follow good sandwich making techniques for the perfect assembly job and choose from these tasty fillings. Remember that all go perfectly between buttered soft baps as well.
  • Wafer thin slices of salami or slicing sausages such as Mortadella with crisp lettuce or, better still, coleslaw from the delicatessen.
  • Chopped cooked chicken or turkey mixed with chopped apple, chopped celery and mayonnaise; top with crisp lettuce.
  • Thinnest slices of ham with sweet cucumber pickle, lamb with mint jelly, turkey with cranberry jelly or rare roast beef with horseradish; top with crisp lettuce.
  • Sardines mashed with lemon juice, then mixed with chopped hard-boiled egg and plenty of freshly milled pepper.
  • Taramasalata has a good flavour; or use home-made kipper or smoked salmon pātė – top with lettuce.
  • Sliced home-made meat loaf with a little mustard and sprigs of watercress; leftover cold hamburger is good, too.
  • Hard-boiled eggs chopped while still hot and mixed with butter – about ½oz (15g) to 4 eggs – so butter melts. Add mayonnaise to bind, seasoning and chopped chives or watercress. As the filling cools in the sandwich, the butter sets and prevents the egg from falling out.
  • Flaked salmon with chopped cucumber and mayonnaise or flaked tuna with chopped apple and mayonnaise; top with crisp lettuce.
  • Peeled ripe tomatoes, seeds removed, mashed and mixed with grated Cheddar cheese to absorb tomato juices and a good seasoning of salt and freshly milled pepper.
  • Cream cheese (Demi-sel is nice) blended with butter until smooth – use half and half – seasoned with salt and pepper and mixed with dressed crab or chopped prawns; top with crisp lettuce.
  • Seasoned cream cheese or cottage cheese with sliced crisp radishes and lettuce. Cottage cheese and cream cheese are also tasty flavoured with horseradish.
  • Marinated kippers, cut in bite-sized pieces, with onion rings and crisp lettuce.
  • A thin smear of raspberry jam and sliced banana with lemon juice squeezed over.
