Why: Super-lean pork needs little cooking and can be ready in minutes.

Best for: Fillet steaks, escalopes and chops.

Prep: Just season and you’re ready to go, or brush with some oil or a sticky marinade.

Cook: In a drop of hot oil over a high heat.

How long: Just 3-5 minutes on each side.

Simplest meal: Pork chops with a home-made apple sauce of cooked and puréed windfalls mixed with a knob of butter.
