Equipment

Much of the equipment used in other oriental cookery is similar to the Chinese, so I will discuss traditional Chinese cooking equipment. While not essential for cooking Southeast Asian, Japanese or Chinese food, there are a few pieces of equipment which will make it very much easier. Most items can be bought very cheaply, especially if you seek out authentic implements from a Chinese or oriental grocer, and you can now find fairly good versions sold in many department stores.
