The Chinese make large sheets of rice noodles from a basic mixture of rice flour, wheat starch (not flour) and water. This pasta is then steamed in sheets. When cooked, the sheets are cut into noodles to be eaten immediately. A very popular street snack in China, Hong Kong and Singapore, the fresh noodles are most often served with a sauce.
