Korea is a peninsula surrounded by two oceans. Fish in some form is usually served each day, if not at each meal. Whether it is in the form of salted cod eggs or fermented anchovies to mix with rice, a grilled fish or braised mackerel in a spicy sauce or perhaps a snack of squid jerky, fish is an important part of the Korean diet.?

In Korean markets fish tends to be sold whole, though its varying presentation reflects the old and new Korea. In the outdoor markets I visited in Seoul, fish attached to rope hung like mobiles from strips of wood. In the modern supermarkets they lay on their side, eyes gleaming on a Styrofoam tray.?
