When this book was still just an idea, Taekyung and I knew that foremost we wanted to create a volume that would be attractive to an American cook. The timing seemed right for our project Many once hard-to-find ingredients are now on many grocery shelves in the United States. Immigration to the U.S. from all over the world, as well as Americans traveling abroad in greater numbers, has expanded international sections in conventional supermarkets to include fish sauce, coconut milk, seaweed, short-grain rice, miso, tofu, sesame oil, dried Asian noodles—the list goes on and on.
