Meat and game feature more strongly on our menu during the autumn and winter months. Lamb is the exception: we have Welsh lamb all the year round and here in Wales we have what we consider the best lamb to be had. The early spring brings lowland lamb, summer the upland lamb and towards late summer through to late autumn the mountain lamb. The mountain lambs feed off pure grass and sweet herbs, and are born out of doors. We can also get salt marsh lamb which comes from around Cardigan Bay and the Gower peninsular.
