I had no idea how many people it takes to write a cookbook before I started this one. There are so many people to thank:
Alex Keene – thank you for the endless recipe development and testing over months and months. Who needs a day off? You are a hard-working, dedicated, passionate and talented chef, and I am so proud to have now opened our restaurant, Via Alta, together.
