“We have such a rich fishing heritage; we’re an island nation! Yet there are still many barriers when it comes to getting more people enjoying seafood. My aim is to demonstrate how easy and versatile seafood can be.”

Some years ago I had the chance to take a sabbatical from my office job and retrain at the world renowned Ballymaloe Cookery School in Ireland, a lifelong dream. There I learnt from amazing teachers and cooked with the finest produce Ireland had to offer. The fish was sustainably caught from local boats and I handled incredible shellfish from tiny periwinkles to prize lobsters.
