It’s so easy to do a lovely bit of salmon for dinner. Like all fresh fish, it hardly needs any cooking. We live off fish; I go down to Cornwall with my daughter quite often to find the best varieties. It tastes best when you get it yourself! — Sheila Taylor

Ingredients

  • 1 side of salmon (about 100-150 g per person)
  • 30 g butter

Method

Slice the fish into portions of the size you want. Warm up a grill pan with the butter in, then put the salmon fillets into the pan. It should be cooked perfectly after about 5 minutes. Sprinkle some salt and pepper over the fish, then squeeze on some lemon juice to your taste.
