This is the chapter where the slow cooker really comes into its own, and, consequently, I have devoted more than half the book to the subject. The recipes here are drawn from cuisines around the world, and the flavours range from hot and spicy curries through fruity tagines to mild-tasting turkey simmered in apple juice.

I’ve included recipes you can leave to cook all day, ready for the evening, as well as a selection of quicker ones, such as the rice-based dishes. I’ve also developed recipes that are a complete meal-in-a-pot, such as Massaman Beef & Potato Curry, so when you lift the lid off your cooker there isn’t anything to do but serve and enjoy.
