Easy-cook white or brown rice is the best choice for cooking in a slow cooker. This rice has been parboiled and gives you tender, separate grains when cooked in a slow cooker. If you try other ordinary long-grain rice it becomes too sticky to be enjoyable. The Pumpkin & Dolcelatte Rice recipe, however, uses risotto rice because the desired result is thicker and creamier than many rice recipes.
