Because of the condensation that builds up and then drips down off the lid, it is necessary to cover certain dishes with foil or cling film while they cook, especially desserts, to prevent them becoming soggy. Cover tightly with cling film or foil, moulded over the top of the dish. When you are cooking something surrounded by boiling water, such as Almond Crème Caramel, be sure not to let the cling film or foil extend down to the water level, or steam will seep underneath.
