A Note about Cooking Times

It is difficult to give accurate cooking times because the cooking temperatures of different brands vary. As a general rule of thumb, older cookers have lower temperatures than modern ones, and smaller cookers cook faster than larger ones.
I also don’t give a range of cooking times, but after you’ve made several of the recipes in this book, you will know if you have to cook for longer or shorter times.

All the recipes in this book have been tested in a 3.5l/122fl oz/13½-cup oval slow cooker with a HIGH temperature of 100°C/212°F and a LOW temperature of 93°C/199°F. Consult your users’ manual to see if your cooker’s specifications differ, and compare the cooking time in similar recipes to determine if you should cook recipes for longer or shorter times. It is, unfortunately, a matter of trial and error.
