Macedonia is on about the same latitude as the Tuscan region of Italy, and it is a country rich in agriculture. There are many different Macedonian salads for every season, and all are simple and easy to make. In the sunny summer months, peppers, tomatoes, and cucumbers are commonly used in salads. The winters are cool and crisp, so heartier ingredients like beets, potatoes, carrots, and beans are favored.
