For me, Macedonian soups are the epitome of comfort food. We grew up eating soups every week, all year round. Many are hearty, filling, and warming for the coldest days of the year; and some are light and refreshing, like Tarator, a chilled cucumber soup, which is served in the hottest months of summer. Whenever guests would arrive unexpectedly, my grandfather would jokingly say “just add a little broth to the soup and everyone will have enough.” I think about him and smile every time I make soup.
