Poultry is a widely used ingredient in Macedonian cooking. In my parents’ villages, chickens would roam the gardens and were a natural part of the agricultural landscape. Macedonia also has a wide selection of game birds that are sometimes used in similar recipes. Growing up, I remember traveling through the villages of Macedonia with my parents, eating at relatives’ homes or in local restaurants, and the chicken dishes were among the best I’ve ever had. All of the recipes in this chapter are common throughout the regions of Macedonia and are simple, rustic, and full of flavor.
