Although much of Macedonian cuisine is heavily influenced by the Mediterranean, the country is geographically landlocked, so seafood like shellfish and squid are not part of the traditional cuisine. Instead, our fish dishes come from Macedonia’s bountiful lakes and rivers, which are a source of freshwater fish such as trout, rainbow trout, and carp. Since these types of fish aren’t always available in North American markets, I recreated these recipes using fish with similar flavors and textures.
