The food of Macedonia is rustic and unassuming, guided by the land and perfected by the people. It embodies a culinary tradition that has been deeply rooted and passed down through generations, while being inspired along the way by the surrounding cultures that have left their footprint on the region.
The people of Macedonia date back to ancient times. Before our common era, Macedonia was vast and spread over much of the southern Balkan Peninsula. So when referencing Macedonia in this book, I mean the geographic area of the Kingdom of Alexander the Great, which Macedonians inhabit. Presently the country is called North Macedonia, although for centuries Macedonians have inhabited the lands that surround the country’s current border.
