Most of us don’t have the luxury of cooking a meal in the middle of the workday. That said, lunch is no time to give up on your commitment to good, healthy food or resign yourself to a PB&J or can of vegetable soup.
We’re both fans of doubling up on meals in the evening, stashing leftovers for lunch the next day, then jazzing them up to ward off taste bud boredom. You’ll notice throughout the book that we share tips on what to do with leftovers—and you should definitely think of them as intentional leftovers rather than some food that’s been languishing in the fridge but you don’t want to waste. Your lunch—or whatever meal you make with these extra helpings—should be worth looking forward to.
