There are various families or other groups of fish of which it is enough to say that Britain, with her Atlantic and North Sea supplies, is better off than any purely Mediterranean country. This applies to the cod family, where we have hake and whiting in common and also enjoy fresh cod, whereas in the Mediterranean people must be content to make do with salt cod. It applies too to the whole range of flatfish. Our soles are better, we have plaice as well as flounder, and the splendid halibut is an excellent fish with which to perform feats of Mediterranean cuisine which are denied to our Mediterranean cousins. And we probably do rather better than they do with regard to lobster, and the rays and the skates, and dogfish and the like.
