Pasta in Zimino

An off-dry white with some zest works here: Riesling or Chenin Blanc. If you add anchovies, add an earthy type of medium-bodied white: Vernaccia. If you add tomatoes, add a light red or hearty rosés: Chianti or Rosso di Salento.
