How to Make Vinegar in a Crock

You will need a one-gallon ceramic crock with a spigot at the bottom. It should be glazed inside and out to preserve the taste of the vinegar and be thick enough to keep the temperature constant through the year. Emile Henry and Clay Coyote are two good brands, but there are others available all over the Internet. Just make sure the spigot is made of cork and soak it in hot water for a few hours before inserting it into the crock. Put in the spigot; then add water to check that there are no leaks.
