Though there are numerous names for different types of clay pots, three basic materials are referred to in this book: earthenware, stoneware, and flameproof ceramic cookware commonly referred to as flameware. And while myriad specialized clay pots from different countries are discussed, the range of pots you’ll actually need for cooking is narrowed down to roughly half a dozen (see Types of Pots).

Understanding what a pot is made of will help you choose which vessel to use for different recipes. At the back of this book you’ll find Internet sources for a wide variety of clay pots.
