Some of these recipes will tell you how to get the maximum flavour from a bowl of sliced carrots, peas or beans.
There’s all sorts of potato dishes, including one of my favourites, Irish Champ – lovely mashed buttery potatoes with spring onions. I’ve also included a shocking pink recipe, Beetroot Bubble and Squeak. It’s not just the colour that shocks, it’s the flavour, too. The Beetroot Fritters are crispy and golden, the Spring Onion Potato Cakes are full of textures and as for the stir-fry – you won’t believe how quick and easy it is.
