This really is tasty to eat as a starter or main course. It also works well with some other fish or meat dishes.
The first thing is to start to cook the onions in a wok with the oil and butter for a couple of minutes. Add the blanched beansprouts and sliced mushrooms and continue to cook over a moderate heat for 2 minutes. Add the spinach and cook for a minute until just wilted.
