On our travels we have tasted a wonderfully varied selection of soups, ranging from elegant and refreshing to restorative and warming, and many of these have become the mainstay of Moro’s repertoire. Each one is a snapshot of a region, revealing something of its culture and resources. We like to think that in making one of these soups it is possible to recreate the essence of a region’s food.
