These recipes are a balanced, seasonal selection of classic vegetable dishes from Spain and the Muslim Mediterranean, a legacy of the wealth of produce available throughout the region, for its markets are some of the richest and most visually stimulating in the world. They are a good example of how these two culinary cultures complement each other, linked in history by the spread of Islam throughout the Mediterranean, which also had a profound effect on agriculture. Over the course of time, however, diets changed. Spain’s has become more fish and meat orientated, while the Muslim Mediterranean still offers a wide selection of vegetable dishes. At Moro we have drawn from all these influences, and while keeping as much of their authenticity as possible, we have made them our own.
