Valencia and Murcia are wonderful cities and both regions still boast a network of Moorish irrigation systems which make it possible to grow much of Spain’s paella rice. At Moro, we use calasparra rice that is grown in Murcia. It is a short-grain rice that has a wonderful ability to absorb liquid and flavour without losing its texture (see Spanish Suppliers).
