Later in this book we have included a recipe for perol. This is a wet rice dish that is traditionally made in a perol pan. A perol pan is a pot with high sides and a rounded base. Because similar domestic saucepans are so suitable to making perol, we do not recommend going to the extra expense of buying a new pan just to make this dish.
