When mum and dad first arrived in Australia they didn’t know where to get chorizo or morcilla, so the natural thing for them to do was to make their own. They’d get together with my dad’s brother Paco and his wife, Carmen, and turn out metres and metres of rich, spicy sausages over the weekend. It was not just a chance to make small goods, it was a chance to come together, speak Spanish, drink wine and laugh. I think it eventually became an excuse to party. My dad, however, is still very serious about his sausage making. He still makes brilliant morcilla and some of the best jamón I have tried outside of Spain.
