In Turkey many people rear chickens in their own backyards, and as a consqeuence, eggs are an important part of the diet. Their value in Turkish cuisine is symbolic as well as nutritional. In southeastern Anatolia in particular eggs play a central part in popular customs at ceremonies and festivities. In Siirt the first week in May is celebrated as the Egg Festival. On the first day of the festival hard-boiled eggs are prepared in every home and taken on picnics out in the country where entertainments are organized. Youngsters engage in egg-shelling competitions and young girls and men spend the holiday getting to know one another: tradition has it that this is the time for betrothals.
