Böreks are one of the greatest achievements of Turkish cuisine and one of the oldest, having come from Central Asia when the Turks migrated westwards. There is an endless variety of böreks bearing different names, according to the way they are prepared. They are all made with layers of flaky or filo pastry and butter and have fillings based on meat or cheese. Böreks may be served as a course in a main meal, as a snack during the day, and especially at teatime. If you haven’t the time to make the dough, bought filo pastry can be used instead.
