In my Mediterranean Seafood (Penguin, 1972 and Ten Speed Press/Prospect Books, 2002), to which this is a companion book, I included a general essay on cooking fish, which it would be inappropriate to reprint here. I repeat, however, some of the most important points, and add a few new ones.
