My career in the Australian food industry started at the same time Chris Manfield and Margie Harris arrived in Sydney from Adelaide back in 1988. Their philosophy - the pursuit of excellence underpinned by passion, integrity, care and driving ambition - is something very dear to my heart. Far too often restaurateurs compromise standards in their endeavours for the quick buck. Not the Paramount. After four hugely successful years, the Paramount Restaurant continues to be recognised by our leading food critics as one of Australia’s top restaurants. We are fortunate to have restaurateurs like Chris and Margie.
