Among the first few recipes in the chapter are some dishes usually prepared to commemorate Nowroz, a New Year celebration that is significant throughout Afghanistan, Iran and across Central Asia.
The Nowroz festival coincides with the spring equinox in March and, just like the full circle of the seasons, it is symbolic of rebirth. Predating Islam, Nowroz is an ancient celebration that traces its roots to Zoroastrianism, the spiritual homeland of which is said to be Balkh, Afghanistan. The colour associated with Nowroz is green, reflecting the Zoroastrian tradition of marking the spring equinox and celebrating the new life it brings.
