In most instances, there is no reason to use anything but butter in cookie doughs. The buttery flavor is irreplaceable, and cookies baked with butter will taste fresh for at least 3 to 4 days if they are stored properly. Cookies baked with jam stay at their best for the shortest amount of time, as the jam tends to become rubbery. To keep cookies crisp, store them in a jar with a little air for circulation; or keep the cover on loosely. If cookies become soft anyway, due to high humidity or rain, dry them in a 200°F(94°C) oven, providing they are not iced, dipped, or filled. Other cookies, such as macaroons, need to be kept soft; store these in an airtight container. If they get a little dry, take them out of the container and place them on a sheet pan in the refrigerator overnight. The old-fashioned method mentioned previously of putting a few apple or quince slices in the jar is helpful with macaroons as well.
