The firm flesh of apricots makes them well suited to poaching. Plus, like all poached fruit, they last for a long time after cooking; simply submerge in the poaching liquid and refrigerate. Similarly, if it is the dead of winter and there are no apricots to be found, both of these recipes work well with dried apricots.
