Tart Round Fruits: Raw

Holiday recipes make their rounds, and I got this cranberry relish from my friend Liz Hollinger’s family. The first time I read the recipe, I texted her, “This recipe is insane. No cooking?! Whole oranges?!” It works and is delicious. It graces our Thanksgiving table every year, but I like it best throughout the weeks after turkey day. The acidity braces even the most cloying comfort foods. The orange marries well with the other yuletide flavors, including the dreaded warming spices. It also works well with other tart fruits, such as fresh currants, gooseberries, even rhubarb.
