This book is organized alphabetically by fruit. Within each chapter there is a Notes Box that gives guidance on signs of ripeness, how to select from the market, and storage notes. Next there is a series of preparation techniques. Each technique has a savory and a sweet variation. The savory variation is a pretty straightforward cookbook-style recipe. The sweet variation most regularly relies on a recipe from the Baker’s Toolkit (more on that in a bit). The sweet recipes are more of a suggested pairing rather than a strict (or as strict as I get) collection of necessary components. If you want to swap custard for ice cream, feel not only free but encouraged to do so. Please note: The recipes in this book generally serve four people of average hunger (unless otherwise noted).
