Although all constituents of a great meal are significant, one must never forget the importance of a well prepared appetiser. It must be beautiful to look at and ultimately light and flavourful, whilst leaving room for the dishes to follow. Inevitably it sets the tone of what’s to come, but more importantly it stimulates the palate and entices and delights the diner. Creating interesting appetisers opens up a world of culinary adventures - all it takes is a little imagination.
