Most people judge a style or type of cookery on the strength of the main course. The recent movement of vegetarian cookery has been to lighten dishes, use more digestible textures and include brighter and bolder seasonings inspired by cuisines from around the world. The care and preparation of main dishes make such a difference to the visual appeal of a meal and thus diner satisfaction. In this chapter, 1 hope you will enjoy my choice of varied dishes produced with seasonal prime vegetables.
