Sunday is a big day at the restaurant. Although we only open for lunch, we often do more covers than lunch and dinner combined at the start of the week. It’s a strange feeling, being in the restaurant on a Sunday morning: everyone outside is either sleeping or ambling out for coffee and a stroll, while inside we’re at full tilt working out how we’re going to turn all our tables, or pushing to get another extra tray of roast potatoes prepped.
Sundays, for us, are about roasts. The recipes that follow have been honed meticulously over the years. We think they’re pretty perfect.
