We know that our food is quite rich and filling. So we have to work extra-hard to make sure our puddings are enticing enough that you find room for just a tablespoon or two of sweetness to end your meal.
In keeping with the traditional feel of QCH, we use recipes and flavours that are approachable and familiar – frangipane, sticky toffee, chocolate – but interpreted our way: a sprinkle of fine salt on the chocolate, for example, or olive oil in our ice cream. This mixture of savoury and sweet tempers the richness of our puddings, making them more manageable after a thick ribeye with confit potatoes.
