Each day at 4pm we all sit around one long table in the bar room and eat together. It’s the only time of day when we’re all together – shop team, chefs, kitchen porters, even the odd supplier has been known to pop in and take a seat with us after they’ve dropped off a delivery. The food we cook and the way we serve it are obviously very different from what goes on the menu – what’s important is flavour (lots of it) and sustenance for weary bodies, many of which are only halfway through their day. It’s a family meal in the sense of community and togetherness all around one table, but it’s also familial in its content – bold, big flavours with lots of carbs and not much intricacy, the kind of thing you’d like to be able to put on the dining-room table when you’ve got lots of family round.
