It’s probably a pathetic restaurant cliché (doubtless all too often repeated in this book) that we give just as much attention to the less glamorous tasks as to those which really excite our chefs. But in the case of the shop it really is true. Your sandwich will have been made by a chef who has rotated his way through our and other restaurant kitchens, and will have been tasted by all of us before service to make sure it’s as good as it needs to be.
