In 2018, we opened a wine bar in the shop next to the restaurant. Wine is central to everything we do at QCH and like most of London’s restaurantophiles, we had fallen in love with the less structured, more as-they-come wine bars popping up in London and Paris. A big inspiration was 40 Maltby Street in Bermondsey, where a blackboard and a wine list tell you what you can eat and drink and any more traditional concepts have been stripped away.
This coincided very happily with the arrival of a fully formed double act. Gus Gluck was an old pal who had worked in some great places in London before heading to Melbourne, the home of stripped-back ‘fine’ dining. He was on his way back to London and had a vision of running a wine bar very similar to what we had in mind. Meanwhile, Nick Bramham, our former sous-chef, was on the lookout for a new project, with a menu rooted in the ethos of QCH, but with more of a southern European focus.
